Suzie and Mark bought Taychreggan from Mark's parents (Joe & Theresa) in November 2001.
Originally from Glasgow, Suzie has an Associateship in Garment Design & Technology from The Scottish College of Textiles in Galashiels. She started working part-time in bars and hotels while she was studying and decided that her future lay there. Suzie has a wealth of experience having worked in many places over the last twenty years: positions included General Manager of Rutland Number 1 and Branigans, both in Edinburgh.Suzie is most at home using her skills learned at college when co-ordinating the design and decoration of public areas and bedrooms as part of the ongoing refurbishment of The Hotel. The majority of her time is now however spent looking after the needs of her and Mark's daughter Katie.
Mark grew up in the pub business: his grandfather, father and uncles all being publicans. He served in The Army for twelve years, leaving in 1995 having attained the rank of Captain. Between '95 and '06 he worked in a number of positions both in and out of the hospitality world, owning The Bush in The Seagate, Dundee for four years before buying Taychreggan along with Suzie. Marks interests include rugby which his lack of fitness no longer allows him to play, he still however occasionally finds time to play his drum kit.
Stephen joined Taychreggan in September 2004 from The Sandford Hotel in Wormit where he was Assistant Manager. Prior to that he had spent four years at Gleneagles, rising to the position of Senior Head Waiter, and had been on the opening team of The Carnoustie Golf Hotel in 1999. While at Gleneagles he was a national finalist in the "Young Chef Young Waiter" competition, achieved the Wine & Spirit Education Trust Advanced Certificate in Wines & Spirits and was awarded The Academy of Culinary Arts Certificate of Excellence. On leaving school Stephen studied at Dundee University where he was awarded a Diploma in Accountancy. He is a keen golfer whose handicap varies between 4 and 6 depending on how much time off work he can arrange.
Colin joined us from The St Andrews Golf Hotel in June 04. He has over 30 years experience in kitchens, mainly spent in Edinburgh. Colin's previous positions include Head Chef at Channings Hotel (part of The Town House Company) and Sous Chef at The Witchery, both in Edinburgh. A real chef with a passion for cooking, his enthusiasm rubs off on all who work with him. Colin is a Dundee United fan who is old enough to remember when they used to win things.
Paul joined Taychreggan in March 2008 from The Macdonald Rusacks Hotel in St Andrews where he was Senior Sous Chef, prior to that he was at Castleton House Hotel in Glamis also as Senior Sous Chef. Paul has also worked at The Seafood Restaurant in St Andrews, Gleneagles and Turnberry. He is a keen fisherman and when not in the kitchen can often be found on the river bank.
A native of Brittany in France, Aline joined Taychreggan in November 2004 from Letham Grange Hotel in Angus where she was a Restaurant Supervisor, prior to that she had worked at Rufflets Country House Hotel near St Andrews also as Restaurant Supervisor. Aline also has a wealth of international experience having worked in her native France but also in Ireland and Austria. She has just returned from maternity leave having recently given birth to her first child.
Originally from the City of Kaunas in Lithuania Vyga joined Taychreggan in August 2005. He is a man of many languages speaking and writing English, Russian, Polish and German fluently in addition to his native tongue. Vyga won many awards during his time in Lithuania including Barista of the Year 2000 and was also a member of the team from Hotel Perkuno Namai in Kaunas who were awarded Restaurant of The Year in the "Lithuanian Chefs, Bartenders and Waiters Championships" in both 1999 and 2001. He has recently acquired a different set of skills decorating his new house, his efforts were however hampered by the attentions of his new puppy Leo.
Graeme came to Dundee in 2000 to study maths at Dundee University and graduated in 2003 as a Bachelor of Science. During his time at university he worked in The Woodlands Hotel in Broughty Ferry and decided that his future lay in the field of hospitality, from The Woodlands he moved to St Andrews Bay Golf Resort & Spa where he spent two years working as a Food & Beverage Supervisor. Graeme joined us in May 07 from The Huntingtower Hotel near Perth where he was Restaurant Manager of their 2 AA rosette restaurant. He is a keen pianist having passed grade seven examinations with the Associated Board of The Royal Schools of Music although he says he now has little time to practice.
Lynsey joined Taychreggan in March 09 from The Swallow Hotel, Dundee. Born and bred in Dundee she initially thought a career in the law was her destiny and has an HND in Legal Services. Lynsey has a wealth of experience in reception, conference & banqueting and restaurant, prior to working at The Swallow she was a wedding & events coordinator at Guthrie Castle and before that was Front of House Manager at Scotland's Hotel in Pitlochry and Duty Manager at The Carmelite Hotel in Aberdeen.
